Instructions
Heat a large skillet over medium heat and add olive oil. Allow it to warm for about 1 minute.
Add chopped onion and diced bell pepper to the skillet. Sauté for 3-4 minutes until tender.
Add ground meat to the skillet, breaking it apart as it cooks. Cook for 5-7 minutes until browned.
Add minced garlic and sauté for an additional minute.
Pour in the sloppy Joe sauce and simmer for 5 minutes on low heat.
Prepare tortillas by laying them out on a clean surface. Warm if necessary.
Remove filling from heat and fold in shredded cheese until melted.
Spoon filling onto the center of each tortilla and roll them up tightly.
Grill the burritos seam-side down in the skillet for 2-3 minutes until golden brown, then flip and grill the other side.
Remove from skillet, let rest for a minute, then slice in half and serve warm.
Notes
These burritos can be customized with different meats or sauces. Serve with fresh herbs or sour cream for added flavor.
