Ingredients
  

Dry Ingredients

  • 2 cups Rolled Oats Use certified gluten-free if necessary.
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt

Wet Ingredients

  • 1/2 cup Honey or Maple Syrup Natural sweeteners provide antioxidants.
  • 1/2 cup Nut Butter Almond or peanut butter works well.
  • 1 teaspoon Vanilla Extract

Add-ins

  • 1 cup Dried Fruits Chopped into smaller pieces.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Prepare a baking sheet by lining it with parchment paper.
  • In a large mixing bowl, combine the rolled oats, baking soda, and salt.
  • In a separate bowl, mix together the nut butter and honey (or maple syrup) until smooth.
  • Add the vanilla extract to the nut butter and honey mixture, stirring until incorporated.
  • Pour the wet ingredients into the dry oat mixture and stir until just combined.
  • Fold in the chopped dried fruits.
  • Drop portions of the cookie dough onto the prepared baking sheet, leaving space between each cookie.
  • Gently flatten each cookie with the back of a spoon or your fingers.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  • Enjoy your cookies fresh or store them in an airtight container.

Notes

Store cookies in an airtight container for up to a week. They can also be frozen for up to three months.
