Instructions
Preheat your oven to 350°F (175°C).
Prepare a baking sheet by lining it with parchment paper.
In a large mixing bowl, combine the rolled oats, baking soda, and salt.
In a separate bowl, mix together the nut butter and honey (or maple syrup) until smooth.
Add the vanilla extract to the nut butter and honey mixture, stirring until incorporated.
Pour the wet ingredients into the dry oat mixture and stir until just combined.
Fold in the chopped dried fruits.
Drop portions of the cookie dough onto the prepared baking sheet, leaving space between each cookie.
Gently flatten each cookie with the back of a spoon or your fingers.
Bake for 10-12 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Store cookies in an airtight container for up to a week. They can also be frozen for up to three months.
