  • 2 cups Cooked Rice Fluffy and slightly sticky, preferably leftover.
  • 4 large Eggs Can be scrambled or fried.
  • 2 medium Tomatoes Diced.
  • 1 medium Onion Sliced thinly.
  • 2 tablespoons Vegetable Oil For sautéing.
  • to taste Salt
  • to taste Black Pepper
  • 1 tablespoon Soy Sauce For added flavor.
  • 2 stalks Green Onions Thinly sliced for garnish.

Instructions
 

  • Gather all ingredients and ensure everything is prepped. Cook your rice if it is not already done.
  • In a large skillet, heat the vegetable oil over medium heat until it shimmers.
  • Add the sliced onions and sauté until translucent, about 2-3 minutes.
  • Add the diced tomatoes and cook until softened, about 3-4 minutes.
  • Whisk the eggs in a bowl and season with salt and pepper.
  • Push the onion and tomato mixture to one side of the skillet and pour the eggs into the cleared space. Cook undisturbed for about 1 minute.
  • Gently scramble the eggs, mixing with the onion and tomato mixture until fully cooked.
  • Add the cooked rice to the skillet, breaking up any clumps and mixing thoroughly.
  • Drizzle soy sauce over the rice and mix well. Cook for another 2 minutes.
  • Remove from heat, transfer to a serving plate, and garnish with sliced green onions.
  • Serve immediately while hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
