Instructions
Gather all ingredients and ensure everything is prepped. Cook your rice if it is not already done.
In a large skillet, heat the vegetable oil over medium heat until it shimmers.
Add the sliced onions and sauté until translucent, about 2-3 minutes.
Add the diced tomatoes and cook until softened, about 3-4 minutes.
Whisk the eggs in a bowl and season with salt and pepper.
Push the onion and tomato mixture to one side of the skillet and pour the eggs into the cleared space. Cook undisturbed for about 1 minute.
Gently scramble the eggs, mixing with the onion and tomato mixture until fully cooked.
Add the cooked rice to the skillet, breaking up any clumps and mixing thoroughly.
Drizzle soy sauce over the rice and mix well. Cook for another 2 minutes.
Remove from heat, transfer to a serving plate, and garnish with sliced green onions.
Serve immediately while hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
