Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, combine the pitted cherries, granulated sugar, cornstarch, and a pinch of cinnamon. Toss gently to coat.
Roll out your pie crust on a floured surface and cut into circles or squares.
Grease a muffin tin and place each dough piece into a muffin cup, pressing down gently.
Spoon the cherry filling into each dough cup, filling generously but not overflowing.
Optionally, create a lattice pattern with remaining dough on top of each pie bite.
Melt the butter and brush it over the tops of the pie bites.
Bake for 20-25 minutes until golden brown and filling is bubbly.
Allow to cool for 10 minutes before removing from the tin.
Serve warm or at room temperature, optionally with ice cream.
Notes
Store leftovers in an airtight container for up to three days or freeze for up to two months.
