  • 2 cups Fresh Cherries, pitted Look for plump and firm fruits with a deep red color.
  • 0.5 cup Granulated Sugar Used to sweeten the cherry filling.
  • 2 tablespoons Cornstarch Acts as a thickening agent for the filling.
  • 1 package Pie Crust Store-bought or homemade, rolled out and cut into shapes.
  • 2 tablespoons Unsalted Butter Melted and brushed over the tops before baking.
  • 1 pinch Ground Cinnamon Optional, for added flavor.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, combine the pitted cherries, granulated sugar, cornstarch, and a pinch of cinnamon. Toss gently to coat.
  • Roll out your pie crust on a floured surface and cut into circles or squares.
  • Grease a muffin tin and place each dough piece into a muffin cup, pressing down gently.
  • Spoon the cherry filling into each dough cup, filling generously but not overflowing.
  • Optionally, create a lattice pattern with remaining dough on top of each pie bite.
  • Melt the butter and brush it over the tops of the pie bites.
  • Bake for 20-25 minutes until golden brown and filling is bubbly.
  • Allow to cool for 10 minutes before removing from the tin.
  • Serve warm or at room temperature, optionally with ice cream.

Notes

Store leftovers in an airtight container for up to three days or freeze for up to two months.
