  • 1 cup Cherry Tomatoes Halved cherry tomatoes provide freshness.

Instructions
 

  • 1. Cook the pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve a cup of the cooking water before draining.
  • 2. Prepare the prawns: Heat 2 tablespoons of olive oil in a skillet. Add minced garlic and red pepper flakes, sauté for 1 minute. Add prawns, season with salt and pepper, and cook until pink and opaque. Remove and set aside.
  • 3. Make the sauce: In the same skillet, add remaining olive oil and halved cherry tomatoes. Cook for 5 minutes until softened.
  • 4. Add the broth: Pour in vegetable broth and simmer for 3-4 minutes.
  • 5. Combine everything: Return prawns to the skillet with drained pasta. Toss together, adding reserved pasta water until desired consistency is reached.
  • 6. Finish with lemon and parsley: Squeeze lemon juice over the pasta and add chopped parsley. Toss to combine.
  • 7. Serve: Plate hot, garnishing with extra parsley if desired. Enjoy immediately!
