Ingredients
  

Beets

  • 1-2 pounds Fresh Beets Medium-sized for even cooking.

Water

  • 1 cup Water For generating steam in the Instant Pot.

Salt

  • 1 teaspoon Salt To enhance the natural sweetness of the beets.

Olive Oil

  • 1 tablespoon Olive Oil Optional, for added richness and flavor.

Vinegar

  • to taste Balsamic or Apple Cider Vinegar Optional, for a tangy contrast.

Instructions
 

  • Rinse the beets thoroughly under cold water to remove any dirt. Do not peel them.
  • Trim the tops and tails of each beet to prevent bleeding during cooking.
  • Place 1 cup of water in the Instant Pot and insert the steamer basket.
  • Arrange the beets in the steamer basket, ensuring they are not overcrowded.
  • Secure the lid and set the steam release valve to sealing. Cook on manual mode for 15 minutes.
  • Allow for a natural pressure release for 10 minutes, then carefully release any remaining pressure.
  • Check the beets for tenderness; if needed, cook for an additional 5 minutes.
  • Remove the beets and let them cool slightly before peeling.
  • Cut the beets into wedges or slices and drizzle with olive oil and vinegar if desired.
  • Serve warm or let cool for salads or grain bowls.

Notes

Beets can be stored in an airtight container in the refrigerator for up to four days.
