Instructions
Rinse the beets thoroughly under cold water to remove any dirt. Do not peel them.
Trim the tops and tails of each beet to prevent bleeding during cooking.
Place 1 cup of water in the Instant Pot and insert the steamer basket.
Arrange the beets in the steamer basket, ensuring they are not overcrowded.
Secure the lid and set the steam release valve to sealing. Cook on manual mode for 15 minutes.
Allow for a natural pressure release for 10 minutes, then carefully release any remaining pressure.
Check the beets for tenderness; if needed, cook for an additional 5 minutes.
Remove the beets and let them cool slightly before peeling.
Cut the beets into wedges or slices and drizzle with olive oil and vinegar if desired.
Serve warm or let cool for salads or grain bowls.

Beets can be stored in an airtight container in the refrigerator for up to four days.
