  • 1.5 pounds Boneless, skinless chicken thighs Preferred for their higher fat content, keeping the meat moist.
  • 0.5 cup Low-sodium soy sauce Provides savory depth of flavor.
  • 0.25 cup Packed brown sugar Adds sweetness and helps create the sticky texture.
  • 4 cloves Minced garlic Essential for imparting robust flavor.
  • 1 tablespoon Freshly grated ginger Adds a warm, spicy note.
  • 1 tablespoon Sesame oil Contributes a nutty aroma and flavor.

Garnishes

  • 2-3 Chopped green onions Used as a garnish for freshness.
  • 1 tablespoon Toasted sesame seeds Optional for garnishing.

Instructions
 

  • In a large mixing bowl, combine soy sauce, brown sugar, minced garlic, and grated ginger. Whisk until the sugar dissolves.
  • Add chicken thighs to the marinade, ensuring each piece is coated. Cover and marinate for at least 30 minutes.
  • Heat a skillet over medium-high heat and add sesame oil. Once hot, add the marinated chicken, searing for 4-5 minutes on each side.
  • Remove chicken and tent with foil. In the same skillet, pour in the remaining marinade and simmer for 5-7 minutes until thickened.
  • Return chicken to the skillet, tossing in the thickened marinade for 2-3 minutes.
  • Transfer to a serving dish and garnish with green onions and sesame seeds. Serve hot.

Notes

For a spicier version, add gochujang to the marinade. You can also substitute chicken with firm tofu for a vegetarian option.
