Instructions
Select a ripe pineapple and slice off the top.
Cut the pineapple in half lengthwise.
Scoop out the flesh, leaving about half an inch on the sides.
Chop the scooped-out pineapple into small pieces.

Add mint leaves and drizzle honey or agave syrup if desired.
Fill the pineapple halves with the mixture.
