  • 10-12 cloves Garlic Crushed to release natural oils.
  • 2-3 pounds Yukon Gold Potatoes Cut into even-sized chunks.
  • 1/4 cup Olive Oil Extra virgin for better flavor.
  • 2 tablespoons Fresh Rosemary, chopped Enhances flavor with a fragrant note.

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a small bowl, combine olive oil, chopped rosemary, salt, and pepper to create a marinade.
  • Pat the chicken dry and place it in a roasting pan, breast-side up.
  • Rub the olive oil mixture all over the chicken, including inside the cavity.
  • Crush the garlic cloves lightly and scatter them inside the cavity and around the chicken.
  • Wash and cut the potatoes into chunks, then toss them with olive oil, salt, and pepper.
  • Arrange the potatoes around the chicken in the roasting pan.
  • Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  • Baste the chicken with pan juices every 20 minutes.
  • Let the chicken rest for 10-15 minutes before carving.
  • Serve hot with the roasted garlic and potatoes.
