Instructions
Preheat your oven to 425°F (220°C).
In a small bowl, combine olive oil, chopped rosemary, salt, and pepper to create a marinade.
Pat the chicken dry and place it in a roasting pan, breast-side up.
Rub the olive oil mixture all over the chicken, including inside the cavity.
Crush the garlic cloves lightly and scatter them inside the cavity and around the chicken.
Wash and cut the potatoes into chunks, then toss them with olive oil, salt, and pepper.
Arrange the potatoes around the chicken in the roasting pan.
Roast the chicken for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
Baste the chicken with pan juices every 20 minutes.
Let the chicken rest for 10-15 minutes before carving.
Serve hot with the roasted garlic and potatoes.
