Instructions
Prepare your ingredients by chopping the carrots, celery, and onion into small pieces. Mince the garlic and set aside.
Place the chicken breasts at the bottom of the slow cooker.
Add the chopped carrots, celery, and onions over the chicken.
Pour in the chicken broth over the ingredients, ensuring it covers everything.
Sprinkle the minced garlic, salt, pepper, and dried thyme over the mixture and stir gently.
Cover and cook on low for 6 to 8 hours.
Once cooked, shred the chicken directly in the slow cooker and mix it back into the broth.
Add the egg noodles and stir gently to combine.
Cover and cook on high for an additional 30 minutes, or until the noodles are tender.
Taste and adjust seasonings as necessary before serving.
Garnish with freshly chopped parsley before serving.
