Instructions
Preheat your oven to 225°F (110°C).
Line a baking sheet with parchment paper and draw a circle (about 8 inches in diameter) on it.
In a clean mixing bowl, whip the egg whites until soft peaks form.
Gradually add the granulated sugar, one tablespoon at a time, while continuing to whip until stiff, glossy peaks form.
Gently fold in the white vinegar and cornstarch.
Transfer the meringue mixture onto the parchment-lined baking sheet, using the circle as a guide.
Bake for 1 hour, then turn off the oven and leave the pavlova inside to cool completely.
Once cooled, remove the pavlova from the oven and peel away the parchment paper.
Whip the heavy cream until soft peaks form and spread it over the pavlova.
Top with fresh fruits and serve immediately.
Notes
Store the meringue and toppings separately to maintain texture. Assemble just before serving.
