Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch round cake pan or a 9x13 inch baking dish.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground ginger, ground cinnamon, and salt.
  • In a large mixing bowl, combine the brown sugar, granulated sugar, unsweetened applesauce, and molasses. Beat until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the hot water.
  • Pour the batter into the prepared cake pan and spread evenly.
  • Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  • Allow the cake to cool in the pan for 10-15 minutes before transferring to a wire rack.
  • Once cooled, serve plain or with your favorite icing.
