  • 4 medium Zucchini Washed and sliced into rounds or half-moons.

Oils

Cheeses

  • 0.5 cup Parmesan Cheese Grated for topping.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Wash and slice the zucchini into even rounds or half-moons.
  • In a large mixing bowl, combine zucchini with olive oil, garlic powder, salt, pepper, and Italian seasoning.
  • In a separate bowl, mix the shredded mozzarella and cheddar cheese.
  • In a greased baking dish, spread half of the seasoned zucchini in an even layer.
  • Sprinkle half of the cheese mixture over the first layer of zucchini.
  • Repeat the layering process with the remaining zucchini and cheese.
  • Sprinkle grated Parmesan cheese over the top layer.
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
  • Let cool for 5 minutes before serving.

Notes

Store leftovers in an airtight container for up to three days. Can be frozen for up to three months.
