Instructions
Preheat your oven to 375°F (190°C).
Wash and slice the zucchini into even rounds or half-moons.
In a large mixing bowl, combine zucchini with olive oil, garlic powder, salt, pepper, and Italian seasoning.
In a separate bowl, mix the shredded mozzarella and cheddar cheese.
In a greased baking dish, spread half of the seasoned zucchini in an even layer.
Sprinkle half of the cheese mixture over the first layer of zucchini.
Repeat the layering process with the remaining zucchini and cheese.
Sprinkle grated Parmesan cheese over the top layer.
Cover with aluminum foil and bake for 25 minutes.
Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
Let cool for 5 minutes before serving.
Notes
Store leftovers in an airtight container for up to three days. Can be frozen for up to three months.
