Instructions
 

  • Gather all ingredients: slice Polish sausage, dice bell peppers, chop onion, mince garlic, and cube potatoes.
  • Heat olive oil in a large pot over medium heat. Add sliced Polish sausage and sauté for 5-7 minutes until browned.
  • Add diced onion and cook for 3-4 minutes until translucent.
  • Add minced garlic and diced bell peppers, sauté for another 3 minutes.
  • Add diced potatoes and stir to coat with the mixture.
  • Pour in broth, scrape any browned bits from the pot, and bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for 20-25 minutes until potatoes are fork-tender.
  • Taste and adjust seasoning with salt, pepper, and paprika as needed.
  • Let sit for a few minutes before serving. Garnish with fresh parsley if desired.
