  • Gather all your ingredients to streamline the cooking process.
  • In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  • Add minced garlic and cook for an additional minute, stirring frequently.
  • Increase heat to medium-high and add ground beef. Cook until browned, about 5-7 minutes, breaking it up with a spoon.
  • Season the beef with salt, black pepper, paprika, and dried oregano. Stir well.
  • Add diced sweet potatoes and stir to combine. Cook for about 5 minutes.
  • Add sliced zucchini and cook for an additional 3-4 minutes.
  • Pour in vegetable broth, scraping the bottom of the pot to deglaze. Bring to a gentle boil.
  • Reduce heat to low, cover, and let simmer for 20-25 minutes until sweet potatoes are fork-tender.
  • Remove from heat, taste, and adjust seasonings as needed.
  • Garnish with freshly chopped parsley before serving.
