Instructions
Heat a large skillet or pot over medium heat and add a splash of oil.
Add the chicken pieces, season with salt, pepper, and paprika, and sauté for 5-7 minutes until golden brown.
Remove the chicken and set aside. In the same skillet, add onion and garlic, cooking for 3-4 minutes until translucent.
Return the chicken to the skillet and stir to combine with onion and garlic.
Add sweet corn and rice, stirring to combine.
Pour in chicken broth, bring to a gentle boil, then reduce heat to low and cover. Simmer for 15-20 minutes.
Remove lid and stir in cream cheese until melted and creamy.
Sprinkle cheddar cheese on top, cover, and let sit for 5 minutes to melt.
Garnish with cilantro and serve hot.
