Ingredients
  

Protein

  • 1 pound Boneless Skinless Chicken Breast Cut into bite-sized pieces.

Vegetables

  • 1 cup Sweet Corn Kernels Canned or frozen.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.

Grains

  • 1 cup Long-Grain White Rice

Liquids

  • 2 cups Low-Sodium Chicken Broth

Dairy

  • 4 ounces Cream Cheese
  • 1 cup Shredded Cheddar Cheese

Spices

  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper

Herbs

  • 1 handful Fresh Cilantro Chopped, optional.

Instructions
 

  • Heat a large skillet or pot over medium heat and add a splash of oil.
  • Add the chicken pieces, season with salt, pepper, and paprika, and sauté for 5-7 minutes until golden brown.
  • Remove the chicken and set aside. In the same skillet, add onion and garlic, cooking for 3-4 minutes until translucent.
  • Return the chicken to the skillet and stir to combine with onion and garlic.
  • Add sweet corn and rice, stirring to combine.
  • Pour in chicken broth, bring to a gentle boil, then reduce heat to low and cover. Simmer for 15-20 minutes.
  • Remove lid and stir in cream cheese until melted and creamy.
  • Sprinkle cheddar cheese on top, cover, and let sit for 5 minutes to melt.
  • Garnish with cilantro and serve hot.

Notes

This dish can be customized with various vegetables or spices to suit your taste.
