  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika

Instructions
 

  • 1. Start by cutting the chicken into bite-sized pieces. Season the chicken pieces with salt and pepper.
  • 2. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned chicken pieces and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken and set aside.
  • 3. In the same skillet, add the chopped onion, diced bell peppers, and minced garlic. Sauté for 3-4 minutes until softened.
  • 4. Stir in the rice, cumin, chili powder, and paprika, allowing the rice to toast slightly for about 1-2 minutes.
  • 5. Pour in the chicken broth and add the diced tomatoes. Stir to combine and bring to a gentle boil.
  • 6. Return the cooked chicken to the skillet and stir everything together.
  • 7. Reduce the heat to low, cover, and let it simmer for about 20 minutes.
  • 8. After 20 minutes, check if the rice is tender and has absorbed all the liquid. If needed, let it simmer for an additional 5 minutes.
  • 9. Fluff the rice gently with a fork and garnish with freshly chopped cilantro.
  • 10. Serve hot, with toppings like avocado slices, lime wedges, or additional cilantro.

Notes
