Instructions
Set your Instant Pot to sauté mode and add olive oil.
Season chicken breast with salt, pepper, and Italian seasoning.
Sauté chicken for 3-4 minutes on each side until golden brown.
Remove chicken and set aside, keeping drippings in the pot.
Sauté minced garlic for about 30 seconds until fragrant.
Pour in chicken broth and deglaze the pot, scraping browned bits.
Return chicken to the pot and add pasta on top, ensuring it's submerged.
Close the lid, set the valve to sealing, and cook on high pressure for 8 minutes.
Perform a quick release of the pressure and remove the chicken.
Add heavy cream and Parmesan cheese to the pasta, stirring to combine.
Slice or shred the chicken and return it to the pot, mixing well.
Serve immediately, garnishing with additional Parmesan or fresh herbs if desired.
