Instructions
In a medium bowl, combine honey, lime juice, minced garlic, olive oil, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
Heat a large skillet or Dutch oven over medium heat. Add marinated chicken breasts and sear for 5-6 minutes on each side until golden brown.
Remove chicken and set aside. Add rice to the pan and toast for about 2 minutes.
Pour in chicken broth, stir, and return seared chicken to the pan. Pour reserved marinade over everything.
Cover and simmer on low for about 20 minutes until rice is tender and chicken is cooked through.
Remove lid, fluff rice, and add diced avocado on top. Slice chicken and lay it over the rice and avocado. Garnish with cilantro.
