Ingredients
  

Protein

  • 1.5 pounds Boneless Skinless Chicken Breasts Tender and juicy, absorbs flavor well.

Marinade

  • 1/4 cup Honey Adds natural sweetness and caramelizes chicken.

Base

  • 1 cup Long-Grain White Rice Absorbs flavors and provides texture.
  • 2 cups Low-Sodium Chicken Broth Infuses rice with flavor.

Toppings

  • 1 whole Ripe Avocado (diced) Adds creaminess and fresh contrast.
  • 1 handful Fresh Cilantro (chopped) Adds color and freshness.

Seasoning

  • Salt and Pepper To taste.

Instructions
 

  • In a medium bowl, combine honey, lime juice, minced garlic, olive oil, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  • Heat a large skillet or Dutch oven over medium heat. Add marinated chicken breasts and sear for 5-6 minutes on each side until golden brown.
  • Remove chicken and set aside. Add rice to the pan and toast for about 2 minutes.
  • Pour in chicken broth, stir, and return seared chicken to the pan. Pour reserved marinade over everything.
  • Cover and simmer on low for about 20 minutes until rice is tender and chicken is cooked through.
  • Remove lid, fluff rice, and add diced avocado on top. Slice chicken and lay it over the rice and avocado. Garnish with cilantro.
