Ingredients

Noodles

  • 8 oz wide rice noodles These noodles are perfect for soaking up the sauce and provide a satisfying texture.

Beef

  • 1 lb beef flank steak Thinly sliced against the grain for the best results.

Sauce

  • 1/4 cup honey Adds a sticky, sweet glaze.
  • 1/4 cup low-sodium soy sauce Adds a savory umami flavor.
  • 4 cloves garlic Minced for aromatic flavor.
  • 1 tablespoon fresh ginger Finely grated for warm spice.
  • 2 tablespoons vegetable oil Used for stir-frying.

Vegetables

  • 1 cup bell peppers Sliced into thin strips.
  • 1 cup snap peas Provides a delightful snap and sweetness.
  • 1/4 teaspoon black pepper Freshly ground for subtle heat.
  • 1 tablespoon sesame seeds Optional, for nutty flavor and visual appeal.
  • 2 green onions Sliced for garnish.
  • red pepper flakes Optional, for extra heat.

Instructions

  • 1. Prepare the noodles according to the package instructions, typically soaking in hot water for 10-15 minutes until tender. Drain and set aside.
  • 2. In a medium bowl, combine the sliced flank steak with soy sauce, honey, minced garlic, and grated ginger. Mix well and marinate for at least 15 minutes.
  • 3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated beef in a single layer and sear for 2-3 minutes without stirring. Flip and cook for another 1-2 minutes until just cooked through. Remove from pan.
  • 4. In the same skillet, add the remaining tablespoon of vegetable oil. Add sliced bell peppers and snap peas, stirring for 3-4 minutes until tender-crisp.
  • 5. Return the beef to the skillet along with the cooked noodles. Pour any remaining marinade over and toss gently. Cook for another 2-3 minutes to heat through.
  • 6. Season with black pepper to taste and adjust sweetness or saltiness with more honey or soy sauce if desired.
  • 7. Serve hot, garnished with sliced green onions and toasted sesame seeds if using.
