Instructions
Gather all ingredients and ensure chicken is thawed and at room temperature.
Set the Instant Pot to 'Sauté' mode and heat the olive oil until it shimmers.
Add minced garlic and sauté for about 30 seconds until fragrant.
Season chicken breasts with salt and pepper, then sear each side for 2-3 minutes until golden brown.
Remove chicken from the pot and set aside.
Pour in honey and balsamic vinegar, scraping the bottom to deglaze the pot.
Add chicken broth and stir to combine.
Return chicken to the pot, ensuring it's submerged in the sauce.
Close the lid, set the valve to sealing, and cook on 'Manual' for 8 minutes.
Allow for a natural release for 5 minutes, then switch to venting to release remaining steam.
Check the internal temperature of the chicken; it should be at least 165°F (75°C).
Remove chicken from the pot and place on a serving platter.
For a thicker sauce, switch to 'Sauté' mode and simmer until desired consistency.
Drizzle sauce over chicken, garnish with fresh thyme, and serve immediately.
