  • 1 teaspoon Salt For seasoning.
  • 1 teaspoon Black Pepper Freshly ground for flavor.
  • 1 teaspoon Thyme Fresh or dried for aroma.
  • 1/2 cup Low-Sodium Chicken Broth To create steam in the Instant Pot.

Instructions
 

  • Gather all ingredients and ensure chicken is thawed and at room temperature.
  • Set the Instant Pot to 'Sauté' mode and heat the olive oil until it shimmers.
  • Add minced garlic and sauté for about 30 seconds until fragrant.
  • Season chicken breasts with salt and pepper, then sear each side for 2-3 minutes until golden brown.
  • Remove chicken from the pot and set aside.
  • Pour in honey and balsamic vinegar, scraping the bottom to deglaze the pot.
  • Add chicken broth and stir to combine.
  • Return chicken to the pot, ensuring it's submerged in the sauce.
  • Close the lid, set the valve to sealing, and cook on 'Manual' for 8 minutes.
  • Allow for a natural release for 5 minutes, then switch to venting to release remaining steam.
  • Check the internal temperature of the chicken; it should be at least 165°F (75°C).
  • Remove chicken from the pot and place on a serving platter.
  • For a thicker sauce, switch to 'Sauté' mode and simmer until desired consistency.
  • Drizzle sauce over chicken, garnish with fresh thyme, and serve immediately.
