Instructions
Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion and cook for 3-4 minutes until translucent.
Stir in minced garlic and diced green bell pepper, sauté for 2-3 minutes.
Add chicken pieces and cook for 5-7 minutes until no longer pink.
Sprinkle in cumin and chili powder, stirring to coat.
Pour in chicken broth, scraping the bottom of the pot.
Add drained white beans and stir gently.
Bring to a gentle boil, then reduce heat and cover. Simmer for 20-30 minutes.
Taste and season with salt and pepper as needed.
Let sit for a few minutes before serving.
Serve topped with cilantro and lime wedges.
Notes
This chili can be served with cornbread or tortilla chips for a complete meal.
