  • 1 pound Boneless Skinless Chicken Breast Cut into bite-sized pieces.
  • 1 can (15 oz) White Beans Rinse and drain before adding.
  • 1 medium Onion Finely chopped.
  • 3 cloves Garlic Minced.
  • 1 medium Green Bell Pepper Diced.
  • 1 teaspoon Ground Cumin
  • 1 tablespoon Chili Powder
  • 4 cups Low-Sodium Chicken Broth
  • 2 tablespoons Olive Oil For sautéing.

Salt and Pepper

Optional Garnishes

Instructions
 

  • Heat olive oil in a large pot over medium heat until shimmering.
  • Add chopped onion and cook for 3-4 minutes until translucent.
  • Stir in minced garlic and diced green bell pepper, sauté for 2-3 minutes.
  • Add chicken pieces and cook for 5-7 minutes until no longer pink.
  • Sprinkle in cumin and chili powder, stirring to coat.
  • Pour in chicken broth, scraping the bottom of the pot.
  • Add drained white beans and stir gently.
  • Bring to a gentle boil, then reduce heat and cover. Simmer for 20-30 minutes.
  • Taste and season with salt and pepper as needed.
  • Let sit for a few minutes before serving.
  • Serve topped with cilantro and lime wedges.

Notes

This chili can be served with cornbread or tortilla chips for a complete meal.
