Instructions
Begin by selecting ripe, fresh strawberries. Rinse them gently under cold water, hull the strawberries, and slice them in half or quarters. Place them in a medium-sized mixing bowl.
Sprinkle 1-2 tablespoons of granulated sugar over the sliced strawberries and gently toss to coat. Let them sit for about 10-15 minutes to draw out their natural juices.
In a separate mixing bowl, pour in 1 cup of heavy cream. Whip the cream on medium speed, gradually adding 2-4 tablespoons of granulated sugar until soft peaks form.
Add 2 tablespoons of freshly squeezed orange juice and the zest of one orange to the whipped cream, and gently fold to combine.
Fold the macerated strawberries and their juices into the whipped cream mixture, being careful not to break down the strawberries.
Transfer the mixture into serving dishes and chill in the refrigerator for at least 30 minutes before serving.
Garnish with fresh mint leaves and serve chilled.
