Instructions
Prepare your workspace and gather all ingredients.
In a large mixing bowl, combine the flour and salt.
Create a well in the center and add the sourdough starter, eggs, and olive oil.
Whisk the eggs and starter together, incorporating the flour from the edges.
Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
Divide the dough into four pieces and roll out each piece to about 1/16 inch thickness.
Cut the rolled dough into desired shapes and dust with flour to prevent sticking.
Cook the pasta in boiling salted water for 2-4 minutes until al dente.
Drain and serve with your favorite sauce.
Notes
Store leftover cooked pasta in an airtight container for up to three days.
