  • 1 cup Sourdough Starter Must be active and bubbly.
  • 2 large Eggs Adds moisture and binds the dough.
  • 1 tablespoon Olive Oil Enhances flavor and texture.
  • 1 teaspoon Salt Essential for seasoning.

Instructions
 

  • Prepare your workspace and gather all ingredients.
  • In a large mixing bowl, combine the flour and salt.
  • Create a well in the center and add the sourdough starter, eggs, and olive oil.
  • Whisk the eggs and starter together, incorporating the flour from the edges.
  • Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  • Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
  • Divide the dough into four pieces and roll out each piece to about 1/16 inch thickness.
  • Cut the rolled dough into desired shapes and dust with flour to prevent sticking.
  • Cook the pasta in boiling salted water for 2-4 minutes until al dente.
  • Drain and serve with your favorite sauce.

Notes

Store leftover cooked pasta in an airtight container for up to three days.
