Breadcrumbs
Preferably panko for added crunch.

Lightly beaten.

Green Onions
Finely chopped.

Instructions
Begin by preparing your salmon. Chop the fresh salmon fillets into small pieces.
In a large mixing bowl, combine the chopped salmon with the breadcrumbs.
Add the beaten egg to the salmon and breadcrumb mixture and stir until well combined.
Incorporate the chopped green onions, fresh parsley, minced garlic, and lemon juice into the mixture.
Season the mixture with salt and pepper to taste.
Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
Form the mixture into patties about 2 to 3 inches in diameter.
Heat olive oil in a skillet over medium heat and test if the oil is ready.
Carefully place the salmon cakes in the skillet and cook for about 4-5 minutes on one side.
Flip the cakes and cook for another 4-5 minutes until golden brown.
Transfer the salmon cakes to a paper towel-lined plate to drain excess oil.
Serve warm with your favorite dipping sauce or a squeeze of lemon.
Notes
Consider adding jalapeños for spice or using canned salmon for a quicker option.
