  • 1 pound Fresh Salmon Skin removed, chopped into small pieces.
  • 1 cup Breadcrumbs Preferably panko for added crunch.
  • 1 large Egg Lightly beaten.
  • ½ cup Green Onions Finely chopped.
  • ¼ cup Fresh Parsley Chopped.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Lemon Juice Freshly squeezed.
  • Salt and Pepper To taste.
  • 2 tablespoons Olive Oil For frying.

Instructions
 

  • Begin by preparing your salmon. Chop the fresh salmon fillets into small pieces.
  • In a large mixing bowl, combine the chopped salmon with the breadcrumbs.
  • Add the beaten egg to the salmon and breadcrumb mixture and stir until well combined.
  • Incorporate the chopped green onions, fresh parsley, minced garlic, and lemon juice into the mixture.
  • Season the mixture with salt and pepper to taste.
  • Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  • Form the mixture into patties about 2 to 3 inches in diameter.
  • Heat olive oil in a skillet over medium heat and test if the oil is ready.
  • Carefully place the salmon cakes in the skillet and cook for about 4-5 minutes on one side.
  • Flip the cakes and cook for another 4-5 minutes until golden brown.
  • Transfer the salmon cakes to a paper towel-lined plate to drain excess oil.
  • Serve warm with your favorite dipping sauce or a squeeze of lemon.

Notes

Consider adding jalapeños for spice or using canned salmon for a quicker option.
