Instructions
In a large mixing bowl, combine the all-purpose flour, salt, and baking soda. Whisk until well combined.
Add the egg to the dry mixture and combine with your hands or a fork. Gradually pour in the water until the dough comes together.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
Divide the dough into four portions and roll out each portion to about 1/8 inch thick. Cut into thin strips.
Boil a large pot of water and cook the noodles for 2-3 minutes until they float and are tender.
In a separate pot, combine the broth, soy sauce, sesame oil, garlic powder, and ginger powder. Simmer gently.
Drain the noodles and add them to the simmering broth. Stir in vegetables and cook for another 2-3 minutes.
Serve hot, garnished with optional toppings.
