Homemade Hearty Beef Pot Pie in the Crock Pot

Ingredients
  

Beef Ingredients

  • 2 pounds Beef Chuck Roast Cut into 1-inch cubes.

Vegetable Ingredients

  • 2 large Carrots Peeled and diced.
  • 2 medium Potatoes Peeled and cubed.
  • 2 stalks Celery Chopped.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.

Liquid Ingredients

  • 2 cups Beef Broth
  • 1 tablespoon Worcestershire Sauce

Other Ingredients

  • 1 cup Frozen Peas
  • 1 teaspoon Dried Thyme
  • to taste Salt and Pepper
  • 2 crusts Pie Crust Pre-made, one for the top and one for the bottom.

Instructions
 

  • 1. Prepare the beef by cutting it into 1-inch cubes and seasoning with salt and pepper.
  • 2. In a skillet, heat oil and sear the beef cubes until browned, about 3-4 minutes per side.
  • 3. Transfer the browned beef to the crock pot.
  • 4. In the same skillet, sauté onions, carrots, celery, and garlic for about 5 minutes.
  • 5. Add the sautéed vegetables to the crock pot over the beef.
  • 6. Layer cubed potatoes and frozen peas on top of the vegetables.
  • 7. Pour beef broth, Worcestershire sauce, and thyme over the mixture and stir gently.
  • 8. Cover the crock pot and cook on low for 6-8 hours.
  • 9. Preheat the oven to 425°F (220°C) about an hour before serving.
  • 10. Prepare the pie crusts according to package instructions.
  • 11. Ladle the beef mixture into the bottom pie crust in a pie dish.
  • 12. Cover with the second pie crust, seal edges, and cut slits in the top crust.
  • 13. Bake for 25-30 minutes until the crust is golden brown.
  • 14. Allow to cool for a few minutes before serving.

Notes

Consider adding different vegetables or herbs for variations. This dish can also be made with chicken or turkey.
