Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla flavoring, mixing until well combined.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, mixing on low speed until just combined.
Fold in the shredded coconut and crushed pineapple until evenly distributed.
Drop rounded balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake for 12-15 minutes until lightly golden around the edges. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
