Instructions
In a large mixing bowl, combine flour, granulated sugar, and salt. Whisk until well mixed.
Add cold, diced butter to the flour mixture. Work the butter into the flour until it resembles coarse crumbs.
Gradually add ice water, mixing gently until the dough begins to come together. Avoid overworking the dough.
Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Peel, core, and thinly slice the apples. In a bowl, toss apples with brown sugar, granulated sugar, cinnamon, and lemon juice.
Preheat oven to 375°F (190°C). Roll out the chilled dough into a circle about 1/8 inch thick.
Transfer the rolled-out dough into a tart pan, pressing it into the edges and trimming excess dough.
Arrange the apple filling evenly over the crust, overlapping the slices for presentation.
Brush the crust edges with the beaten egg for a golden finish.
Bake for 35-40 minutes until apples are tender and crust is golden brown. Rotate halfway through baking.
Let the tart cool for 10-15 minutes before serving. Dust with powdered sugar or serve with ice cream if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days.
