  • Start by preparing your ingredients. Dice the onion, chop the carrots and celery, mince the garlic, and drain the chickpeas. Having everything ready will make the cooking process smoother.
  • In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add the diced onion. Sauté for about 3-5 minutes, stirring occasionally, until the onion becomes translucent and slightly golden.
  • Next, add the minced garlic to the pot. Sauté for an additional minute until the garlic is fragrant, being careful not to let it burn.
  • Now, incorporate the chopped carrots and celery. Stir well to combine with the onion and garlic. Cook for another 5 minutes, allowing the vegetables to soften.
  • Once the vegetables are tender, add the chicken breasts to the pot. Season with salt, ground cumin, paprika, and black pepper. Stir to coat the chicken in the spices.
  • Pour in the 6 cups of vegetable broth, ensuring that the chicken is fully submerged. Bring the mixture to a gentle boil over high heat.
  • Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for 20-25 minutes, or until the chicken is cooked through and tender.
  • After the chicken is cooked, remove it from the pot and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.
  • Return the shredded chicken to the pot along with the drained chickpeas. Stir everything together, allowing the chickpeas to heat through for about 5 minutes.
