Instructions
 

  • Prepare your ingredients by dicing the chicken, carrots, onion, and potatoes into bite-sized pieces. Mince the garlic and have the frozen peas ready.
  • Add the diced chicken breast to the slow cooker, distributing it evenly across the bottom.
  • Layer the diced carrots, potatoes, and onion on top of the chicken.
  • Add the minced garlic over the vegetables.
  • Pour in the chicken broth, ensuring all ingredients are submerged.
  • Add the frozen peas last to preserve their color and texture.
  • Sprinkle the dried thyme, salt, and black pepper over the top. Stir gently to combine.
  • Cover the slow cooker and set it on low heat for 6 to 8 hours or high for 4 to 5 hours.
  • Check for doneness; the chicken should be tender and easily shredded.
  • Stir in the heavy cream to add richness to the filling.
  • Prepare the pie crust according to package instructions and place it over the filling.
  • Cover the slow cooker and cook for an additional 30 minutes to 1 hour on high until the crust is golden brown.
