Instructions
Prepare your ingredients by dicing the chicken, carrots, onion, and potatoes into bite-sized pieces. Mince the garlic and have the frozen peas ready.
Add the diced chicken breast to the slow cooker, distributing it evenly across the bottom.
Layer the diced carrots, potatoes, and onion on top of the chicken.
Add the minced garlic over the vegetables.
Pour in the chicken broth, ensuring all ingredients are submerged.
Add the frozen peas last to preserve their color and texture.
Sprinkle the dried thyme, salt, and black pepper over the top. Stir gently to combine.
Cover the slow cooker and set it on low heat for 6 to 8 hours or high for 4 to 5 hours.
Check for doneness; the chicken should be tender and easily shredded.
