Instructions
Preheat your oven to 375°F (190°C).
Pound the chicken breasts to an even thickness of about 1/2 inch.
Season both sides of the chicken with salt and pepper.
Spread pesto sauce over each chicken breast, leaving a small border around the edges.
Sprinkle mozzarella cheese and spinach on top of the pesto.
Roll each chicken breast tightly and secure with toothpicks.
Heat olive oil in a skillet over medium heat and sear the roll-ups seam side down for 4-5 minutes until golden brown.
Turn the roll-ups to brown the other side for another 4-5 minutes.
Transfer the skillet to the oven and bake for 15-20 minutes until the chicken is cooked through.
Let the roll-ups rest for 5 minutes before removing toothpicks and slicing.
Serve immediately and enjoy!
