  • 1.5 pounds Boneless, skinless chicken breasts Tenderized to an even thickness for uniform cooking.
  • 1 cup Pesto sauce Store-bought or homemade.
  • 1 cup Shredded mozzarella cheese Can substitute with provolone or fontina.
  • 1 cup Fresh spinach leaves Washed and dried thoroughly.
  • 1 teaspoon Salt Adjust according to taste.
  • 0.5 teaspoon Black pepper Adjust according to taste.
  • 2 tablespoons Olive oil Extra virgin recommended.
  • Toothpicks For securing the roll-ups.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Pound the chicken breasts to an even thickness of about 1/2 inch.
  • Season both sides of the chicken with salt and pepper.
  • Spread pesto sauce over each chicken breast, leaving a small border around the edges.
  • Sprinkle mozzarella cheese and spinach on top of the pesto.
  • Roll each chicken breast tightly and secure with toothpicks.
  • Heat olive oil in a skillet over medium heat and sear the roll-ups seam side down for 4-5 minutes until golden brown.
  • Turn the roll-ups to brown the other side for another 4-5 minutes.
  • Transfer the skillet to the oven and bake for 15-20 minutes until the chicken is cooked through.
  • Let the roll-ups rest for 5 minutes before removing toothpicks and slicing.
  • Serve immediately and enjoy!
