  • 2 large Boneless, Skinless Chicken Breasts Approximately 1 pound total.
  • 1 cup All-Purpose Flour For dredging the chicken.
  • 2 large Eggs Beaten for egg wash.
  • 1 cup Breadcrumbs Plain or Italian-style.
  • ½ cup Grated Parmesan Cheese Mixed with breadcrumbs.
  • 2 cups Marinara Sauce High-quality for best flavor.
  • 1 cup Shredded Mozzarella Cheese For topping the chicken.
  • ½ cup Olive Oil For frying the chicken.
  • to taste Salt and Pepper For seasoning.
  • handful Fresh Basil Optional for garnish.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Pound the chicken breasts to an even thickness of about ½ inch.
  • Set up a breading station: flour in one dish, beaten eggs in another, and breadcrumbs mixed with Parmesan in a third.
  • Coat each chicken breast in flour, dip in eggs, and then coat with the breadcrumb mixture.
  • Heat olive oil in a skillet over medium-high heat and cook the breaded chicken for 3-4 minutes per side until golden brown.
  • Transfer the chicken to a baking dish and pour marinara sauce over each piece.
  • Sprinkle shredded mozzarella cheese on top and bake for 20-25 minutes until the chicken is cooked through and cheese is melted.
  • Let the dish rest for 5 minutes before serving. Garnish with fresh basil if desired.

Notes

For a healthier version, consider baking the chicken instead of frying. You can also experiment with different cheeses or add vegetables to the marinara sauce.
