Instructions
Preheat your oven to 400°F (200°C).
Pound the chicken breasts to an even thickness, about half an inch.
Season both sides of the chicken with salt and pepper.
Set up a breading station: whisk the eggs in one bowl and place breadcrumbs in another.
Dip each chicken breast into the egg mixture, then coat with breadcrumbs.
Place the breaded chicken on a baking sheet lined with parchment paper.
Drizzle olive oil over the breaded chicken.
Bake for 20-25 minutes until cooked through and golden brown.
While chicken is baking, prepare the slider buns by cutting them in half and toasting if desired.
Once chicken is done, let it rest for a few minutes.
Assemble sliders with chicken, Swiss cheese, and Dijon mustard on the buns.
Optionally, return assembled sliders to the oven for 5 minutes to melt cheese.
Let cool slightly before serving.
Notes
For variations, try different cheeses or add jalapeños for heat. Serve with sweet potato fries or a salad.
