Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken breasts dry with paper towels.
In a small bowl, combine olive oil, garlic powder, salt, and pepper.
Rub the seasoning mixture over both sides of the chicken breasts.
Place the seasoned chicken on a baking sheet lined with parchment paper.
Roast the chicken for 25-30 minutes until the internal temperature reaches 165°F (75°C).
While the chicken is roasting, wash and chop the kale, removing tough stems.
In a large mixing bowl, combine kale, cherry tomatoes, and red onion.
Once cooked, let the chicken rest for 5 minutes, then slice it.
Add the sliced chicken to the mixing bowl with the kale and vegetables.
Sprinkle grated Parmesan cheese over the salad.
Whisk together lemon juice and honey, then drizzle over the salad.
Toss the salad gently to combine all ingredients.
Serve immediately, garnished with extra Parmesan if desired.

For added crunch, consider including nuts or different proteins like shrimp or chickpeas.
