  • 1 teaspoon Salt Key seasoning for flavor.
  • 1/2 teaspoon Pepper Freshly ground black pepper.
  • 4 cups Kale Chopped, fresh kale.
  • 1/2 cup Parmesan Cheese Grated, adds rich flavor.
  • 1 cup Cherry Tomatoes Halved, adds sweetness.
  • 1/4 cup Red Onion Thinly sliced for crispness.
  • 2 tablespoons Lemon Juice Freshly squeezed for brightness.
  • 1 teaspoon Honey Adds a hint of sweetness.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken breasts dry with paper towels.
  • In a small bowl, combine olive oil, garlic powder, salt, and pepper.
  • Rub the seasoning mixture over both sides of the chicken breasts.
  • Place the seasoned chicken on a baking sheet lined with parchment paper.
  • Roast the chicken for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  • While the chicken is roasting, wash and chop the kale, removing tough stems.
  • In a large mixing bowl, combine kale, cherry tomatoes, and red onion.
  • Once cooked, let the chicken rest for 5 minutes, then slice it.
  • Add the sliced chicken to the mixing bowl with the kale and vegetables.
  • Sprinkle grated Parmesan cheese over the salad.
  • Whisk together lemon juice and honey, then drizzle over the salad.
  • Toss the salad gently to combine all ingredients.
  • Serve immediately, garnished with extra Parmesan if desired.

Notes

For added crunch, consider including nuts or different proteins like shrimp or chickpeas.
