Instructions
1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve 1 cup of pasta water, then drain.
2. Prepare the Halloumi: Slice halloumi and heat a skillet with 1 tablespoon of olive oil. Cook halloumi slices until golden brown, about 2-3 minutes per side.
3. Sauté the Vegetables: In the same skillet, add another tablespoon of olive oil. Sauté chopped onion until translucent, then add minced garlic and cook for 1 minute.
4. Add Bell Pepper and Zucchini: Toss in sliced bell pepper and zucchini. Sauté until tender but crisp, about 5-7 minutes.
5. Add Cherry Tomatoes: Stir in halved cherry tomatoes and cook until softened, about 2-3 minutes. Season with salt and pepper.
6. Combine with Pasta: Add cooked pasta to the skillet with vegetables. Toss to combine, adding reserved pasta water as needed.
7. Incorporate Halloumi: Gently fold in crispy halloumi, lemon zest, and juice. Toss to meld flavors.
8. Finish with Fresh Basil: Remove from heat and stir in fresh basil. Adjust seasoning and serve hot.
