Ingredients
  

Pasta

  • 200 g Pasta Choose your favorite type, such as penne, fusilli, or spaghetti.

Halloumi

  • 250 g Halloumi cheese Slice into 1 cm thick slices.

Olive Oil

  • 2 tablespoons Olive oil Extra virgin for best flavor.

Onion

  • 1 medium Onion Finely chopped.

Garlic

  • 2 cloves Garlic Minced.

Bell Pepper

  • 1 Bell pepper Sliced, any color.

Zucchini

  • 1 Zucchini Sliced into half-moons.

Cherry Tomatoes

  • 100 g Cherry tomatoes Halved.

Basil

  • 1 handful Fresh basil leaves Adds freshness.

Lemon

  • 1 Lemon Zest and juice.

Salt and Pepper

  • Salt and pepper To taste.

Instructions
 

  • 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve 1 cup of pasta water, then drain.
  • 2. Prepare the Halloumi: Slice halloumi and heat a skillet with 1 tablespoon of olive oil. Cook halloumi slices until golden brown, about 2-3 minutes per side.
  • 3. Sauté the Vegetables: In the same skillet, add another tablespoon of olive oil. Sauté chopped onion until translucent, then add minced garlic and cook for 1 minute.
  • 4. Add Bell Pepper and Zucchini: Toss in sliced bell pepper and zucchini. Sauté until tender but crisp, about 5-7 minutes.
  • 5. Add Cherry Tomatoes: Stir in halved cherry tomatoes and cook until softened, about 2-3 minutes. Season with salt and pepper.
  • 6. Combine with Pasta: Add cooked pasta to the skillet with vegetables. Toss to combine, adding reserved pasta water as needed.
  • 7. Incorporate Halloumi: Gently fold in crispy halloumi, lemon zest, and juice. Toss to meld flavors.
  • 8. Finish with Fresh Basil: Remove from heat and stir in fresh basil. Adjust seasoning and serve hot.
