  • 4 pieces Boneless, skinless chicken breasts Each weighing approximately 6 ounces.
  • 3 peppers Chipotle peppers in adobo sauce Finely chopped, use 1 tablespoon of adobo sauce.
  • 1/4 cup Fresh lime juice Juice of about 2 limes.
  • 4 cloves Garlic Minced finely.
  • 1/4 cup Extra virgin olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Freshly ground black pepper To taste.

Instructions
 

  • In a mixing bowl, combine the minced chipotle peppers, adobo sauce, lime juice, minced garlic, olive oil, honey, salt, and pepper. Whisk until smooth.
  • Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal or cover and refrigerate for at least 1 hour.
  • Preheat your grill to medium-high heat.
  • Remove the chicken from the refrigerator and let it sit at room temperature for about 15 minutes.
  • Lightly oil the grill grates to prevent sticking. Place the marinated chicken on the grill.
  • Grill for about 6-7 minutes on one side, then flip and grill for another 5-7 minutes until the internal temperature reaches 165°F.
  • Remove the chicken from the grill and let it rest for about 5 minutes before slicing.
  • Serve with your choice of sides.

Notes

For variations, consider adding diced pineapple or mango to the marinade, or using chicken thighs for a richer flavor.
