Chicken Breasts

Fresh Peaches

Honey

  • 1/4 cup honey Natural sweetener for the sauce.

Fresh Ginger

Salt and Pepper

Instructions
 

  • Begin by marinating the chicken. In a mixing bowl, combine the olive oil, juice of one lime, salt, and pepper. Whisk together until well combined. Add the chicken breasts, ensuring they are well coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  • While the chicken is marinating, prepare the sauce. In a separate bowl, mix together the honey, juice of the second lime, grated ginger, and a pinch of salt. Stir until the ingredients are fully combined.
  • Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.
  • Once the grill is hot, remove the chicken from the marinade and place the chicken breasts directly onto the grill grates. Grill for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • While the chicken is grilling, prepare the peaches. Cut the peaches into wedges and brush them lightly with olive oil. After flipping the chicken for the second time, add the peach wedges to the grill.
  • Once the chicken and peaches are cooked, remove them from the grill and let them rest for about 5 minutes.
  • To serve, slice the grilled chicken breasts on a diagonal and arrange them on a serving platter. Top with the grilled peach wedges, and drizzle generously with the fresh lime honey ginger sauce. Finish with a sprinkle of chopped cilantro.
