Instructions
1. Prepare your ingredients: wash and slice the zucchini, cut the chicken into bite-sized pieces, and mince the garlic.
2. Heat olive oil in a large skillet over medium-high heat until it shimmers.
3. Add chicken pieces to the skillet, season with salt, pepper, and Italian seasoning, and cook for 5-6 minutes until golden brown and cooked through.
4. Transfer the chicken to a plate and cover with foil to keep warm.
5. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
6. Add sliced zucchini to the skillet and sauté for 4-5 minutes until tender yet crisp.
7. Return the chicken to the skillet, toss to combine, and allow to meld for another 2-3 minutes.
8. Remove from heat, sprinkle with fresh parsley, and serve immediately.
Notes
For variations, consider adding chickpeas, red pepper flakes, or different vegetables like bell peppers or spinach.
