  • 1 pound Boneless Skinless Chicken Breast Cut into bite-sized pieces.
  • 2 medium Zucchini Sliced into half-moon shapes.
  • 4 cloves Garlic Minced.
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Black Pepper To taste.
  • 1 teaspoon Italian Seasoning Blends dried herbs.

Garnish

  • 1 handful Fresh Parsley Chopped, for garnish.

Instructions
 

  • 1. Prepare your ingredients: wash and slice the zucchini, cut the chicken into bite-sized pieces, and mince the garlic.
  • 2. Heat olive oil in a large skillet over medium-high heat until it shimmers.
  • 3. Add chicken pieces to the skillet, season with salt, pepper, and Italian seasoning, and cook for 5-6 minutes until golden brown and cooked through.
  • 4. Transfer the chicken to a plate and cover with foil to keep warm.
  • 5. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  • 6. Add sliced zucchini to the skillet and sauté for 4-5 minutes until tender yet crisp.
  • 7. Return the chicken to the skillet, toss to combine, and allow to meld for another 2-3 minutes.
  • 8. Remove from heat, sprinkle with fresh parsley, and serve immediately.

Notes

For variations, consider adding chickpeas, red pepper flakes, or different vegetables like bell peppers or spinach.
