Instructions
 

  • Preheat your oven to 450°F (230°C).
  • Pat the beef roast dry with paper towels.
  • Season the beef generously with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat and sear the beef for 3-4 minutes on each side.
  • In a mixing bowl, combine softened butter, minced garlic, and chopped herbs.
  • Spread the garlic herb butter over the seared beef roast.
  • If using, pour beef broth into the bottom of the roasting pan.
  • Insert a meat thermometer into the thickest part of the roast and place it in the oven.
  • Roast for about 15-20 minutes per pound for medium-rare.
  • Remove the beef from the oven and let it rest for 15-20 minutes before slicing.
  • Slice the roast against the grain and serve warm.

Notes

Consider adding crushed red pepper flakes for a spicy twist or surrounding the roast with root vegetables for added flavor.
