Instructions
Preheat your oven to 450°F (230°C).
Pat the beef roast dry with paper towels.
Season the beef generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat and sear the beef for 3-4 minutes on each side.
In a mixing bowl, combine softened butter, minced garlic, and chopped herbs.
Spread the garlic herb butter over the seared beef roast.
If using, pour beef broth into the bottom of the roasting pan.
Insert a meat thermometer into the thickest part of the roast and place it in the oven.
Roast for about 15-20 minutes per pound for medium-rare.
Remove the beef from the oven and let it rest for 15-20 minutes before slicing.
Slice the roast against the grain and serve warm.
