Instructions
Start by gathering all your ingredients and ensure they are prepped. Rinse the baby potatoes under cold water, then cut them in half. Set aside.
Season the chicken thighs generously with salt and pepper on both sides.
In a large skillet, heat 2 tablespoons of unsalted butter over medium-high heat. Once melted, place the chicken thighs skin-side down in the skillet.
Cook the chicken thighs for about 7-8 minutes without moving them to allow the skin to become golden and crispy.
Flip the chicken thighs over and cook for an additional 5-6 minutes until the internal temperature reaches 165°F (75°C). Transfer to a plate and cover to keep warm.
