  • Start by gathering all your ingredients and ensure they are prepped. Rinse the baby potatoes under cold water, then cut them in half. Set aside.
  • Season the chicken thighs generously with salt and pepper on both sides.
  • In a large skillet, heat 2 tablespoons of unsalted butter over medium-high heat. Once melted, place the chicken thighs skin-side down in the skillet.
  • Cook the chicken thighs for about 7-8 minutes without moving them to allow the skin to become golden and crispy.
  • Flip the chicken thighs over and cook for an additional 5-6 minutes until the internal temperature reaches 165°F (75°C). Transfer to a plate and cover to keep warm.
  • In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute until fragrant.
  • Add the halved baby potatoes to the skillet, stirring to coat them in the garlic butter.
  • Spread the potatoes evenly and return the chicken thighs to the pan on top of the potatoes.
  • Cover the skillet and reduce heat to medium-low. Cook for about 15-20 minutes until the potatoes are fork-tender and golden brown.
  • Squeeze fresh lemon juice over the chicken and potatoes, and sprinkle with freshly chopped herbs before serving.
  • Remove from heat and let rest for a few minutes before serving directly from the skillet.
