  • 200 grams Fresh Smoked Salmon Sliced into bite-sized pieces.
  • 4 cups Mixed Greens A blend of arugula, spinach, and baby kale.
  • 1 medium Cucumber Diced or thinly sliced.
  • 1 cup Cherry Tomatoes Halved.
  • 0.5 medium Red Onion Thinly sliced.
  • 1 medium Avocado Diced or sliced.
  • 2 tablespoons Lemon Juice Freshly squeezed.
  • 2 tablespoons Olive Oil Extra virgin.
  • to taste Salt
  • to taste Black Pepper Freshly ground.

Instructions
 

  • Wash the mixed greens thoroughly and spin dry in a salad spinner.
  • Slice the cucumber into thin rounds or small cubes.
  • Cut each cherry tomato in half.
  • Thinly slice half of the red onion.
  • Dice or slice the avocado and add it to the bowl with the cucumber.
  • In a large salad bowl, add the mixed greens, followed by the cucumber, cherry tomatoes, red onion, and avocado.
  • Top the salad with the fresh smoked salmon.
  • In a small bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately or chill for 10-15 minutes before serving.

Notes

For variations, consider adding olives, feta cheese, or grains like quinoa for added nutrition.
