Instructions
Wash the mixed greens thoroughly and spin dry in a salad spinner.
Slice the cucumber into thin rounds or small cubes.
Cut each cherry tomato in half.
Thinly slice half of the red onion.
Dice or slice the avocado and add it to the bowl with the cucumber.
In a large salad bowl, add the mixed greens, followed by the cucumber, cherry tomatoes, red onion, and avocado.
Top the salad with the fresh smoked salmon.
In a small bowl, whisk together lemon juice and olive oil. Season with salt and pepper.
Drizzle the dressing over the salad and toss gently to combine.
Serve immediately or chill for 10-15 minutes before serving.
