  • 4 cups Kale Tear into bite-sized pieces, remove tough stems.
  • 2 medium Apples Core and slice thinly, Honeycrisp or Fuji recommended.
  • 0.5 cup Walnuts Chopped, toasting recommended for enhanced flavor.
  • 0.5 cup Feta Cheese Crumble before adding to salad.
  • 0.25 cup Olive Oil Extra-virgin recommended.
  • 2 tablespoons Lemon Juice Freshly squeezed for best flavor.
  • 1 tablespoon Honey or Maple Syrup Adjust sweetness to taste.

Instructions
 

  • Rinse kale under cold water, pat dry, remove stems, and tear into pieces. Place in a large mixing bowl.
  • Sprinkle a pinch of salt over the kale and massage for 2-3 minutes to soften.
  • Core and slice apples thinly, then add to the bowl with kale.
  • Chop walnuts and toast in a dry skillet over medium heat for about 5 minutes until fragrant. Allow to cool, then add to salad.
  • Crumble feta cheese and add to the mixing bowl.
  • In a separate bowl, whisk together olive oil, lemon juice, and honey or maple syrup.
  • Pour dressing over salad and toss gently to combine.
  • Let the salad sit for 5-10 minutes to allow flavors to meld.
  • Adjust seasoning with salt and pepper before serving.
  • Serve immediately or store leftovers in an airtight container in the refrigerator.

Notes

This salad is best enjoyed fresh. Consider adding grilled chicken or chickpeas for extra protein.
