Instructions
Rinse kale under cold water, pat dry, remove stems, and tear into pieces. Place in a large mixing bowl.
Sprinkle a pinch of salt over the kale and massage for 2-3 minutes to soften.
Core and slice apples thinly, then add to the bowl with kale.
Chop walnuts and toast in a dry skillet over medium heat for about 5 minutes until fragrant. Allow to cool, then add to salad.
Crumble feta cheese and add to the mixing bowl.
In a separate bowl, whisk together olive oil, lemon juice, and honey or maple syrup.
Pour dressing over salad and toss gently to combine.
