  • 4 medium Ripe Tomatoes Diced, preferably vine-ripened for sweetness.
  • 0.5 medium Red Onion Finely chopped.
  • 1 small bunch Cilantro Chopped.
  • 1-2 tablespoons Lime Juice Freshly squeezed.
  • 1 medium Jalapeño Pepper Finely chopped, adjust based on spice preference.
  • 0.5 teaspoon Salt Adjust to taste.

Instructions
 

  • Wash the tomatoes under cold running water and pat them dry. Cut each tomato in half and remove the seeds if desired.
  • Chop the tomatoes into small, even pieces and place them in a large mixing bowl.
  • Peel and finely chop half of the onion and add it to the bowl.
  • Finely chop a small bunch of cilantro and add it to the mixing bowl.
  • Finely chop the jalapeño, adjusting the amount based on your heat preference, and add it to the bowl.
  • Squeeze the juice of one or two limes over the mixture, avoiding seeds.
  • Sprinkle a pinch of salt over the mixture and adjust to taste.
  • Gently mix all ingredients together, being careful not to mash the tomatoes.
  • Taste and adjust seasoning if necessary. Let sit for 10-15 minutes before serving.
  • Serve in a bowl, garnished with a sprig of cilantro.

Notes

Store leftovers in an airtight container in the refrigerator and consume within two days for best flavor.
