Instructions
Wash the tomatoes under cold running water and pat them dry. Cut each tomato in half and remove the seeds if desired.
Chop the tomatoes into small, even pieces and place them in a large mixing bowl.
Peel and finely chop half of the onion and add it to the bowl.
Finely chop a small bunch of cilantro and add it to the mixing bowl.
Finely chop the jalapeño, adjusting the amount based on your heat preference, and add it to the bowl.
Squeeze the juice of one or two limes over the mixture, avoiding seeds.
Sprinkle a pinch of salt over the mixture and adjust to taste.
Gently mix all ingredients together, being careful not to mash the tomatoes.
Taste and adjust seasoning if necessary. Let sit for 10-15 minutes before serving.
Serve in a bowl, garnished with a sprig of cilantro.
Notes
Store leftovers in an airtight container in the refrigerator and consume within two days for best flavor.
