Ingredients
  

Protein

  • 2 pieces Boneless Skinless Chicken Breasts Around 1 pound in total.

Fruits

  • 1 piece Ripe Mango Peeled and diced.
  • 1 large Ripe Avocado Sliced.

Vegetables

  • 1/4 piece Red Onion Thinly sliced.
  • 1 cup Cherry Tomatoes Halved.
  • 1 handful Fresh Cilantro Chopped.

Condiments

  • 1 piece Lime Juice squeezed.
  • 2 tablespoons Extra Virgin Olive Oil For dressing.

Seasoning

  • to taste Salt
  • to taste Pepper

Instructions
 

  • Season the chicken breasts with salt, pepper, and olive oil. Marinate for 15 minutes.
  • Preheat the grill or grill pan over medium-high heat.
  • Grill the chicken for 6-7 minutes on each side until cooked through.
  • Prepare the vegetables: dice the mango, slice the avocado, and thinly slice the red onion and cherry tomatoes.
  • Let the grilled chicken rest for 5 minutes, then slice into bite-sized pieces.
  • In a mixing bowl, combine the red onion, cherry tomatoes, mango, and avocado. Toss gently.
  • Add the sliced chicken, cilantro, olive oil, and lime juice. Toss to combine.
  • Adjust seasoning with salt and pepper as needed. Serve immediately.

Notes

This salad can be served as a standalone dish or with grains like quinoa or brown rice for a heartier meal.
