Instructions
Season the chicken breasts with salt, pepper, and olive oil. Marinate for 15 minutes.
Preheat the grill or grill pan over medium-high heat.
Grill the chicken for 6-7 minutes on each side until cooked through.
Prepare the vegetables: dice the mango, slice the avocado, and thinly slice the red onion and cherry tomatoes.
Let the grilled chicken rest for 5 minutes, then slice into bite-sized pieces.
In a mixing bowl, combine the red onion, cherry tomatoes, mango, and avocado. Toss gently.
Add the sliced chicken, cilantro, olive oil, and lime juice. Toss to combine.
Adjust seasoning with salt and pepper as needed. Serve immediately.
