  • 4 cups Fresh Baby Spinach Washed and dried.
  • 1 cup Fresh Blueberries Rinsed and drained.
  • 1/2 cup Chopped Nuts Such as walnuts or almonds.
  • 1/3 cup Feta Cheese Crumbled.
  • 1/4 cup Olive Oil Extra virgin.
  • 2 tablespoons Balsamic Vinegar
  • 1 tablespoon Honey
  • to taste Salt
  • to taste Black Pepper Freshly ground.

Instructions
 

  • Rinse the spinach leaves under cold water and dry them thoroughly.
  • Rinse the blueberries under cool water and pat them dry.
  • Chop the nuts into small pieces.
  • In a small mixing bowl, combine olive oil, balsamic vinegar, and honey. Whisk until well combined.
  • Season the dressing with salt and pepper to taste.
  • In a large salad bowl, combine spinach, blueberries, and chopped nuts. Toss gently.
  • Add crumbled feta cheese and toss gently again.
  • Drizzle the dressing over the salad and toss gently to coat.
  • Serve immediately.
