Preferably an English cucumber.

Instructions
Rinse the shrimp under cold water and pat dry with paper towels.
Heat olive oil in a skillet over medium heat. Add shrimp in a single layer.
Season shrimp with salt and pepper. Cook for 2-3 minutes until pink, then flip and add minced garlic. Cook for another 2 minutes.
Remove shrimp from heat and let cool.
In a mixing bowl, mash the avocado and mix in lemon juice.
Slice cucumber into rounds and arrange on a platter.
Chop cooled shrimp and fold into the avocado mixture.
Spoon the shrimp and avocado mixture onto cucumber slices.
Garnish with fresh herbs and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 24 hours.
