Ingredients
  

Seafood

  • 1 pound Fresh Shrimp, peeled and deveined Use large shrimp for best texture.

Produce

  • 1 medium Avocado Should yield about 1 cup when mashed.
  • 1 large Cucumber Preferably an English cucumber.
  • 1 medium Lemon Juice Freshly squeezed from one lemon.
  • 1 clove Garlic, minced
  • 2 tablespoons Olive Oil Extra virgin for sautéing.

Seasoning

  • 1 pinch Salt To taste.
  • 1 pinch Pepper Freshly cracked, to taste.

Herbs

  • 2 tablespoons Fresh Herbs (Cilantro or Parsley), chopped For garnish.

Instructions
 

  • Rinse the shrimp under cold water and pat dry with paper towels.
  • Heat olive oil in a skillet over medium heat. Add shrimp in a single layer.
  • Season shrimp with salt and pepper. Cook for 2-3 minutes until pink, then flip and add minced garlic. Cook for another 2 minutes.
  • Remove shrimp from heat and let cool.
  • In a mixing bowl, mash the avocado and mix in lemon juice.
  • Slice cucumber into rounds and arrange on a platter.
  • Chop cooled shrimp and fold into the avocado mixture.
  • Spoon the shrimp and avocado mixture onto cucumber slices.
  • Garnish with fresh herbs and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 24 hours.
