  • 4 cups Arugula Fresh arugula leaves, washed and dried.
  • 1 cup Strawberries Fresh, hulled and sliced.
  • 0.5 cup Blueberries Fresh blueberries, rinsed.
  • 0.5 cup Goat cheese Crumble for topping.
  • 0.25 cup Walnuts Toasted for added crunch.

Vinaigrette Ingredients

  • 3 tablespoons Olive oil Extra virgin for best flavor.
  • 1 tablespoon Balsamic vinegar For tanginess.
  • 1 teaspoon Honey To balance acidity.

Salt and Pepper

Instructions
 

  • Wash the arugula thoroughly under cold running water and dry it using a salad spinner or paper towels.
  • Hull and slice the strawberries into thin pieces, and rinse the blueberries gently.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, and season with salt and pepper.
  • In a large mixing bowl, combine the arugula, strawberries, and blueberries, and toss gently.
  • Sprinkle the goat cheese and toasted walnuts over the salad and toss gently again.
  • Drizzle the vinaigrette over the salad just before serving and toss to coat.
  • Serve immediately, optionally garnished with extra berries and goat cheese.

Notes

This salad can be served as a light lunch or a side dish. For added protein, consider topping with grilled chicken or chickpeas.
