  • 0.25 cup Red Onion, finely chopped Provides a zesty kick.
  • 2 tablespoons Extra Virgin Olive Oil Base for the dressing.
  • 1 medium Lemon Juice Freshly squeezed for best flavor.

  • 0.25 cup Fresh Herbs (Parsley or Cilantro), chopped Adds freshness and flavor.

Instructions
 

  • Gather all ingredients and prepare your workspace.
  • Cook the chicken if not already done. Grill or poach until fully cooked.
  • Prepare the fresh corn by boiling or thawing as needed.
  • Chop the bell pepper, cucumber, and red onion into small pieces.
  • In a large mixing bowl, combine chicken, corn, bell pepper, cucumber, and red onion.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
  • Pour the dressing over the salad mixture and toss until well coated.
  • Fold in the chopped fresh herbs and chill in the refrigerator for about 30 minutes before serving.

Notes

For variations, consider adding avocado, black beans, or cherry tomatoes.
