Instructions
Preheat your oven to 375°F (190°C).
Prepare your pie crust in a 9-inch pie plate.
Slice the ripe tomatoes and drain on paper towels for 10-15 minutes.
In a mixing bowl, combine basil, cheddar cheese, mayonnaise, salt, pepper, and garlic powder.
Layer half of the tomatoes in the crust, followed by half of the cheese mixture. Repeat.
Drizzle olive oil over the top.
Cover loosely with foil and bake for 25 minutes.
Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
Let cool for 10 minutes before slicing and serving.
Notes
Store leftovers in an airtight container for up to three days. Can be frozen for up to three months.
