  • 4-6 medium Ripe Tomatoes Sliced, preferably heirloom or vine-ripened.
  • 1 each Pie Crust Pre-made or homemade, thawed if store-bought.
  • 0.5 cup Fresh Basil Chopped.
  • 1 cup Cheddar Cheese Shredded sharp cheddar.
  • 0.5 cup Mayonnaise
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper Freshly ground.
  • 1 teaspoon Garlic Powder
  • 1 tablespoon Olive Oil

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare your pie crust in a 9-inch pie plate.
  • Slice the ripe tomatoes and drain on paper towels for 10-15 minutes.
  • In a mixing bowl, combine basil, cheddar cheese, mayonnaise, salt, pepper, and garlic powder.
  • Layer half of the tomatoes in the crust, followed by half of the cheese mixture. Repeat.
  • Drizzle olive oil over the top.
  • Cover loosely with foil and bake for 25 minutes.
  • Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
  • Let cool for 10 minutes before slicing and serving.

Notes

Store leftovers in an airtight container for up to three days. Can be frozen for up to three months.
